White was born in Leeds, the United Kingdom, on 11 September 1961. He was the third of the four boys born to the English Chef Frank White and Maria-Rosa Gallina. White dropped out from Allerton High School, where he was studying, without any degree, to train himself as a chef. Initially, he trained himself at Hotel St George, Harrogate, and then at Box Tree in Ilkley.
He went to London in 1981 and began his training as a commis with Albert and Michel Roux at Le Gavroche. He trained notable chefs like Gordon Ramsey, Shannon Bennett.
